Ingredients
600g diced chicken breast or thigh
2 tbsp cornflour (plus 1 tsp extra for the slurry)1 tsp smoked paprika, ½ tsp garlic powder, salt, and pepper
4 garlic cloves (grated) and 1 tsp fresh ginger (grated)80g honey, 60ml light soy sauce, 1 tbsp rice vinegar, 1 tbsp sweet chili sauce, 1 tsp sesame oil
Cooked jasmine or basmati rice and sliced cucumbers for serving
Instructions
Coat the chicken: Toss the diced chicken with 2 tablespoons of cornflour, smoked paprika, garlic powder, salt, and pepper until fully covered.Sear: Heat oil in a large frying pan over medium-high heat. Cook the chicken until golden brown on all sides.Aromatics: Lower the heat slightly. Add the grated garlic and ginger, and cook for 30 seconds.Make the sauce: Stir in the honey, soy sauce, rice vinegar, sweet chili sauce, and sesame oil. Simmer for 1 minute.Thicken: Mix 1 teaspoon of cornflour with 2 tablespoons of cold water to make a slurry. Pour it into the pan and cook for 1 more minute until the sauce is thick and glossy.Serve: Spoon over warm rice and top with fresh cucumbers
